Elevate your fried zucchini, or any vegetable, with paleo friendly ingredients in this simple, yet delicious recipe by Tiana Durbin, nutritionist.

Ingredients:

  • 2 large zucchini cut into 2×2
  • 1 c. almond flour
  • 2 scoops unflavored 3CARB
  • 3 tbsp. garlic & herb seasoning
  • 1 tbsp. salt
  • 4 tbsp. ghee
  • Dash of pepper
  • 2 eggs, beaten

Method:

  • Preheat oven to 350 degrees.
  • Combine the almond flour, 3CARB, salt, pepper & seasoning in a bowl.
  • Coat 1 pc. of zucchini in the beaten eggs, dredge in the 3CARB mixture, shake off excess flour.
  • Place on parchment-covered baking tray. Repeat.
  • Bake in the oven until tender.
  • Remove from oven. Melt ghee in a pan and fry until crispy.
  • Enjoy with marinara or ranch dressing.
