Who doesn’t want cookies for breakfast? But if they are low in fat and sugar and packed with protein it doesn’t sound so bad after all. This a great way to have breakfast on the go!

These are my latest creation, inspired by my husband and I tracking our macros a little closer. This process has us cutting some of the fat from our diet and adding in more carbohydrates. It has been fun adding things like oats back into our diet.

This recipe made 10 cookies for me, which makes it easy to just split the ingredients in half to know exactly how much you are eating. That means you get to eat 5 cookies for breakfast!

Ingredients

  • 2 eggs
  • 1 tsp of vanilla
  • 1/4 cup of milk (any type of milk is fine)
  • 1/4 cup of water
  • 1/2 banana
  • 1/2 cup of old fashioned organic oats
  • 2 scoops of protein powder
  • 2 tbs of coconut flour
  • 1/4 tsp of baking soda
  • 1/4 tsp of salt
  • 2 tbs of cinnamon
  • 1/4 tsp of nutmeg
  • 1/2 cup of raisins (optional)

Method

Preheat oven to 350 degrees.
Mix all wet ingredients together, the add all the dry and combine. Add the raisins in last. Let the batter rest for about 5 minutes, it will thicken.

Drop tablespoon-fulls of batter onto a parchment paper lined pan, bake for 15-20 mins. The longer they bake the harder they will be.
