Ingredients

  • 2 heaped tablespoons of coconut flour
  • 1 scoop of chocolate protein powder
  • 1/4 teaspoon of baking powder
  • 3 beaten eggs
  • 1/4 to 1/2 cup of coconut milk*(see notes)
  • a handful of blueberries
  • 1 tablespoon of coconut oil to cook

* for a richer flavour, mix the coconut milk with a cold espresso. If you use a rice protein, you’ll need more liquid. If whey, less. So put in a 1/4 cup of the liquid first and mix. Leave it to rest for a couple of minutes to see how thick it is and then add more liquid if you need. The mix should be gloopy but not runny and should pour into the skillet to cook. You shouldn’t have to scrape it off the spoon.

Method

  1. Beat the eggs.
  2. Stir in the dry ingredients.
  3. Add the milk reading the notes above.
  4. Stir in the blueberries.
  5. Heat a skillet and grease with the coconut oil.
  6. Pour in your batter and cook for about 2 minutes and then flip and cook for another 2 minutes.
